Ahhh, this salad. I can’t even stand it. I mean, look at the photo alone. Seriously. I can’t.
But I will. Because you need to know how to recreate this. Because it’s so easy. And so gorgeous. And so sexy.
Super Sexy roasted red cabbage salad
1 head red cabbage
2 tbsp. coconut oil (or olive oil)
1 bunch fresh arugula (or spinach or other dark leafy green)
1/4 cup shaved parmesan cheese
1/4 cup roasted pine nuts
3 tbsp. balsamic vinaigrette
Chop cabbage into 1-inch slices and roast as instructed in my no-fail roasting instructions. (Since this cabbage is in thick slices, it’ll take about 30 to 40 minutes until it’s nice and tender.) Now, the best part: putting it on the plate. This looks sooooo elegant. You ready? On a plate, place 1 or 2 slices of the roasted red cabbage. Top that with fresh arugula, shaved parmesan cheese, roasted pine nuts and balsamic vinaigrette.
How sexy is that?!?
