Skinny Summer cabbage salad
1/2 head green cabbage
2 tbsp. coconut oil (or olive oil)
1 cup fresh strawberries
1 cup fresh blueberries
1/2 pear
2 handfuls almonds
2 handfuls sunflower seeds
1/4 cup crumbled bleu cheese (optional)
Chop cabbage into bite-sized pieces and follow my roasting instructions for perfectly-sweet roasted cabbage. Finely slice the strawberries and even the pear (makes it look more elegant) and throw all ingredients in a salad bowl. I had blueberries that we’d picked at a blueberry farm with our free She Just Glows Kids playgroup, so I threw those in as well. The blue cheese is optional but adds a buttery saltiness that is a nice counterpoint to the sweet pear, strawberries and blueberries.
One of the main ways I lost 25 pounds after the birth of our second son was returning to fruit when I had a sweet craving, rather than reaching for cookies and ice cream. I love that this salad can satisfy the sweet tooth in a clean and delicious way. That’s why I call it the Skinny Summer cabbage salad! ‘Cause if I change my habits now, this summer, I will be as fit as I want to be!
