4-Ingredient clean-eating Mexican coleslaw
1/2 head green cabbage
1 bunch cilantro
2 tbsp. olive oil
Cut cabbage into thin slivers, mix with all ingredients together, add salt and pepper to taste, and put in container in the fridge for at least an hour before serving. (It helps the flavors marinade.) So good, light and tasty!
My sister made this, and put shredded Slow Cooker salsa chicken on top of it. I still talk about that meal. It was 2 years ago. Healthy, delicious and clean.
Oh, and the whole thing is $2.36, which is 39¢ per serving. Score. (My sister is soooooo smart.)
