I loooooove me some cucumber. So why not add it to my cocktail? It’s so light and clean that it pairs perfectly with anything off the grill. I enjoyed it here with grilled corn, chicken, baked beans and a summer salad.

Homemade cucumber-mint martini

2 ounces vodka
1/2 cucumber
1 handful mint
1 cup ice

Put the mint in the cocktail shaker and muddle. Peel and chop the cucumber, then hold it in your hands, over the shaker, and squeeze. Let the cucumber juice go into the shaker, plus a couple extra cucumber chunks for good measure. Add ice and vodka, shake it up and enjoy!

(If your cucumber isn’t “juicing” well, put all the chunks into the shaker and mash them with a spoon, then use a strainer when you pour.)

Note: This is not a sweet cocktail. It tastes just like minty cucumber and probably isn’t for every taste. If you want to sweeten it up, I’d suggest adding a couple splashes of Fresca or maybe even a few squirts of your kids’ Capri Sun. #momoftheyear
