Cabbage is suuuuper cheap, and it’s the perfect roasted veggie go-to when you want to make sure you’re eating lots of greens, which is a major component of The 3-Day Feel Amazing Challenge.

In fact, I roast veggies almost every night, using my favorite eat-your-veggies roasting recipe. Here’s one of the gorgeous things you can make with roasted cabbage.

Cozy Up roasted red cabbage salad

1 head red cabbage
2 tbsp. coconut oil (or olive oil)
2 small red onions, chopped in half
2 large handfuls green beans
1/4 cup sunflower seeds

Chop cabbage into bite-sized pieces, toss with coconut oil on baking sheet and roast at 375 degrees until it’s tender (usually 20 to 30 minutes). On a separate baking sheet, toss green beans and halved red onions with coconut oil, salt and pepper, and roast as well. Eyeball and remove each veggie when looking tender and sweetly-charred (about 20 minutes for green beans and onion).

Throw it all on a salad platter and sprinkle with sunflower seeds! Best when served warm.
