Yes, I love to talk about the benefits of clean eating. But this pie does not fall into the clean eating category. I guess it’s dirty eating. But I’m making an exception because it’s reeeeeeally good. Like, in an everyone-wants-to-know-my-recipe-but-I-don’t-want-to-share-it-because-it’s-so-easy kind of way. Well, the jig is up. And now my mother-in-law will know how little effort it is for me to make her favorite pie. Darn it.

Easy Key Lime Pie Recipe With Graham Cracker Crust

“My” insanely-easy Key Lime pie recipe with graham cracker crust

For the crust, I use this recipe:
1 1/2 cups graham crackers
1/3 cup white sugar
6 tablespoons butter

Put the butter in the microwave for 15 seconds or so, just to soften. Put the graham crackers in a food processor and finely chop. Add sugar and melted butter to the food processor and let all 3 ingredients incorporate. Use your fingers to press the mixture into a pie plate.

For the filling, I use this recipe:
5 egg yolks
1 can (14 ounces) sweetened condensed milk
1/2 cup Key Lime juice

In a bowl, beat the egg yolks. Add sweetened condensed milk and Key Lime juice and stir until blended. Pour into uncooked graham cracker pie crust. Bake the pie in a 375-degree preheated oven for about 15 minutes.

And if you want to get really crazy, you can make your own whipped cream. As long as you have an electric mixer, it’s super simple. (It’s been months and my toddler still hasn’t forgotten the ONE time I let him help me make whipped cream. Now, whenever he sees the KitchenAid mixer in the cabinet, he points at it and shouts: “Cream, cream!” And hey, who can blame him?)

For the whipped cream, I use this recipe from Alton Brown:
1 cup heavy whipping cream
2 tablespoons sugar

Put the metal mixing bowl in the freezer for at least 10 minutes before you start mixing. (This step makes a huge difference!) When ready, assemble the mixer and add whipping cream and sugar to the bowl. Beat for a couple minutes, until the cream forms stiff peaks. It’s awesome to watch (especially for kids) and so easy to do!

Scoop a dollop on top of your Key Lime pie and eat it right away.
